Ingredients:  

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 lb Chicken thighs, boneless and skinless cut into chunks
  • 1 cup Onion, chopped
  • 2 cloves Garlic, minced
  • 1 cup Tomatoes, diced
  • 4 cups Chicken broth
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
  • 2 tbsp Olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onions and garlic, and sauté until softened.
  • 3. Add the chicken chunks and cook until browned on all sides.
  • 4. Stir in the diced tomatoes and cook for another 5 minutes.
  • 5. Pour in the chicken broth, bring to a boil, then reduce heat and let simmer for 30 minutes.
  • 6. Add the shrimp and cook until they turn pink, about 5-7 minutes.
  • 7. Season with salt and pepper to taste. Serve hot.

Notes:

This stew is perfect for a cozy dinner. Feel free to add more vegetables if you like.
