Ingredients:  

Main Ingredients

  • 1 lb lean beef stew meat cut into cubes
  • 2 cups carrots sliced
  • 2 cups potatoes diced
  • 1 cup celery sliced
  • 1 cup onion chopped
  • 4 cups low-sodium beef broth
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp black pepper
  • 2 tbsp olive oil

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add beef and cook until browned on all sides.
  • 3. Add onions and cook until softened.
  • 4. Add carrots, potatoes, and celery. Stir to combine.
  • 5. Pour in beef broth and add thyme, rosemary, and black pepper.
  • 6. Bring to a boil, then reduce heat to low and simmer for 2 hours.
  • 7. Serve hot and enjoy!

Notes:

For a thicker stew, you can mix 2 tablespoons of cornstarch with 1/4 cup of water and add it to the stew during the last 10 minutes of cooking.
