Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add beef and cook until browned on all sides.
3. Add onion and garlic, cook until softened.
4. Stir in tomato paste, cook for 2 minutes.
5. Add beef broth, carrots, potatoes, salt, and pepper.
6. Bring to a boil, then reduce heat and simmer for 2 hours.
7. Serve hot with fresh bread.
Notes:
Feel free to add other vegetables like peas or green beans.
