Ingredients:  

Main Ingredients

  • 1 lb white fish fillets cut into chunks
  • 1 tbsp olive oil
  • 1 onion chopped
  • 1 bell pepper chopped
  • 2 cloves garlic minced
  • 14 oz canned tomatoes diced
  • 1 cup coconut milk
  • 1 cup fish stock
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup cilantro chopped

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion, bell pepper, and garlic. Cook until softened.
  • 3. Stir in the diced tomatoes, coconut milk, and fish stock. Bring to a simmer.
  • 4. Add the fish chunks, salt, and black pepper. Cook until the fish is cooked through, about 10-15 minutes.
  • 5. Stir in the chopped cilantro and serve hot.

Notes:

This stew is best served with rice or crusty bread.
