Ingredients:  

Main Ingredients

  • 2 cups Rice
  • 1 lb Crawfish tails
  • 1 large Onion, diced
  • 1 large Bell pepper, diced
  • 2 cloves Garlic, minced
  • 1 tbsp Cajun seasoning
  • 4 cups Chicken broth
  • 1 can Diced tomatoes
  • 2 tbsp Olive oil
  • to taste Salt and pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the diced onion and bell pepper, and cook until softened.
  • 3. Stir in the minced garlic and cook for another minute.
  • 4. Add the rice and cook, stirring frequently, until lightly toasted.
  • 5. Pour in the chicken broth and diced tomatoes. Bring to a boil.
  • 6. Reduce the heat to low, cover, and simmer for 20 minutes.
  • 7. Stir in the crawfish tails and Cajun seasoning. Cook until the crawfish is heated through.
  • 8. Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to adjust the spice level by adding more or less Cajun seasoning.
