Ingredients:  

Main Ingredients

  • 2 lbs Cowfoot cleaned and chopped
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 1 tbsp Thyme fresh or dried
  • 1 tsp Salt to taste
  • 1 tsp Black pepper to taste
  • 2 cups Water
  • 2 tbsp Vegetable oil
  • 2 medium Carrots sliced
  • 2 medium Potatoes peeled and chopped

Instructions: 

  • 1. Heat the vegetable oil in a large pot over medium heat.
  • 2. Add the chopped onions and minced garlic. Sauté until fragrant.
  • 3. Add the cowfoot pieces to the pot and brown on all sides.
  • 4. Add the thyme, salt, black pepper, and water. Bring to a boil.
  • 5. Reduce the heat to low, cover, and simmer for about 2.5 to 3 hours until the cowfoot is tender.
  • 6. Add the carrots and potatoes. Continue to cook until the vegetables are tender, about 20-30 minutes.
  • 7. Adjust seasoning with more salt and pepper if needed. Serve hot.

Notes:

This stew is even better the next day as the flavors meld together.
