Instructions:
1. Heat the vegetable oil in a large pot over medium heat.
2. Add the chopped onions and minced garlic. Sauté until fragrant.
3. Add the cowfoot pieces to the pot and brown on all sides.
4. Add the thyme, salt, black pepper, and water. Bring to a boil.
5. Reduce the heat to low, cover, and simmer for about 2.5 to 3 hours until the cowfoot is tender.
6. Add the carrots and potatoes. Continue to cook until the vegetables are tender, about 20-30 minutes.
7. Adjust seasoning with more salt and pepper if needed. Serve hot.
Notes:
This stew is even better the next day as the flavors meld together.
