Instructions:
Heat olive oil in a large pot over medium heat.
Add chopped onion and minced garlic. Sauté until softened.
Add carrots, potatoes, and celery. Cook for about 5 minutes.
Pour in vegetable broth and diced tomatoes. Stir well.
Add thyme, rosemary, salt, and pepper. Bring to a boil.
Reduce heat and let it simmer for about 30 minutes, or until vegetables are tender.
Stir in frozen peas and cook for another 5 minutes.
Serve hot and enjoy!

This stew is perfect for a cozy dinner. Feel free to add more vegetables as you like.
