Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup celery, chopped
  • 4 cups vegetable broth
  • 1 can diced tomatoes (14.5 oz)
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper or to taste
  • 1 cup frozen peas

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and minced garlic. Sauté until softened.
  • Add carrots, potatoes, and celery. Cook for about 5 minutes.
  • Pour in vegetable broth and diced tomatoes. Stir well.
  • Add thyme, rosemary, salt, and pepper. Bring to a boil.
  • Reduce heat and let it simmer for about 30 minutes, or until vegetables are tender.
  • Stir in frozen peas and cook for another 5 minutes.
  • Serve hot and enjoy!

Notes:

This stew is perfect for a cozy dinner. Feel free to add more vegetables as you like.
