Garlic, minced

Fish stock

for thickening
Instructions:
1. Rinse fish fillets with lime juice and water. Pat dry.
2. Heat oil in a large pot over medium heat. Add onions, bell pepper, and garlic. Sauté until soft.
3. Add fish stock, tomatoes, thyme, salt, black pepper, and paprika. Bring to a simmer.
4. Add fish fillets to the pot. Cover and cook for 20-25 minutes until fish is cooked through.
5. Mix flour with a little water to make a paste. Stir into the pot to thicken the stew. Cook for another 5 minutes.
6. Serve hot with rice or bread.
Notes:
This dish is best enjoyed fresh. Adjust seasoning to taste.
