Ingredients:  

Main Ingredients

  • 1 lb beef stew meat
  • 2 cups corn kernels fresh or frozen
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups beef broth
  • 2 potatoes peeled and diced
  • 1 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1 tsp paprika
  • 1 tbsp olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the beef stew meat and cook until browned on all sides.
  • 3. Add the chopped onion and minced garlic, and cook until the onion is translucent.
  • 4. Pour in the beef broth and bring to a boil.
  • 5. Add the diced potatoes, corn kernels, salt, black pepper, and paprika. Reduce heat to low and simmer for about 45 minutes, or until the potatoes are tender.
  • 6. Adjust seasoning to taste and serve hot.

Notes:

This stew is even better the next day!
