Ingredients:  

Main Ingredients

  • 1 cup mung beans rinsed and soaked
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 inch ginger minced
  • 2 cups vegetable broth
  • 1 cup coconut milk
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • to taste salt
  • to taste black pepper
  • 1 tbsp olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chopped onion, garlic, and ginger. Sauté until fragrant.
  • 3. Add the turmeric, cumin, and coriander powders. Stir well.
  • 4. Add the soaked mung beans and vegetable broth. Bring to a boil.
  • 5. Reduce the heat and let it simmer for about 30 minutes, or until the beans are tender.
  • 6. Stir in the coconut milk and season with salt and pepper. Simmer for another 10 minutes.
  • 7. Serve hot, garnished with fresh herbs if desired.

Notes:

Feel free to add vegetables like spinach or carrots for extra nutrition.
