Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion, garlic, and ginger. Sauté until fragrant.
3. Add the turmeric, cumin, and coriander powders. Stir well.
4. Add the soaked mung beans and vegetable broth. Bring to a boil.
5. Reduce the heat and let it simmer for about 30 minutes, or until the beans are tender.
6. Stir in the coconut milk and season with salt and pepper. Simmer for another 10 minutes.
7. Serve hot, garnished with fresh herbs if desired.
Notes:
Feel free to add vegetables like spinach or carrots for extra nutrition.
