Ingredients:  

Main Ingredients

  • 500 g Lamb, cubed
  • 500 g Beef, cubed
  • 2 Onions, chopped
  • 3 Carrots, sliced
  • 4 cloves Garlic, minced
  • 2 tbsp Olive oil
  • 1 cup Red wine
  • 4 cups Beef broth
  • 2 tbsp Tomato paste
  • 2 tsp Thyme
  • 2 tsp Rosemary
  • to taste Salt and pepper
  • 2 cups Potatoes, diced

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the lamb and beef cubes, and brown them on all sides. Remove and set aside.
  • 3. In the same pot, add the onions, carrots, and garlic. Cook until softened.
  • 4. Pour in the red wine and let it reduce by half.
  • 5. Add the beef broth, tomato paste, thyme, rosemary, and the browned meat back to the pot. Stir well.
  • 6. Bring to a boil, then reduce heat and let it simmer for about 1.5 hours.
  • 7. Add the potatoes and cook for another 30 minutes, or until the potatoes are tender.
  • 8. Season with salt and pepper to taste. Serve hot.

Notes:

This stew tastes even better the next day. Store leftovers in the fridge.
