Instructions:
1. Heat oil in a large pot over medium heat. Add chicken and cook until browned.
2. Add onion and garlic, cook until softened.
3. Stir in bell peppers and potatoes, cook for a few minutes.
4. Pour in tomato sauce, water, and soy sauce. Season with salt and pepper.
5. Bring to a boil, then reduce heat and simmer for 30-40 minutes, until chicken is cooked through and potatoes are tender.
6. Serve hot with rice.
Notes:
Feel free to add other vegetables like carrots or peas.
