Ingredients:  

Main Ingredients

  • 2 lbs Groundhog meat cut into chunks
  • 2 cups Potatoes diced
  • 1 cup Carrots sliced
  • 1 cup Onions chopped
  • 4 cups Beef broth
  • 2 cloves Garlic minced
  • 1 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add groundhog meat and brown on all sides.
  • 3. Add onions and garlic, cook until softened.
  • 4. Pour in beef broth, add potatoes, carrots, salt, and pepper.
  • 5. Bring to a boil, then reduce heat and simmer for 2 hours.
  • 6. Serve hot and enjoy!

Notes:

Feel free to add other vegetables like celery or peas.
