Instructions:
Heat olive oil in a large pot over medium heat.

Add chopped onion and minced garlic, cook until softened.
Add carrots and potatoes, stir to combine.
Pour in beef broth, add paprika, salt, and pepper.
Bring to a boil, then reduce heat and simmer for 45 minutes to 1 hour, until vegetables are tender.
