Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 lb beef stew meat cut into cubes
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 2 cups carrots sliced
  • 2 cups potatoes diced
  • 4 cups beef broth
  • 1 tsp paprika
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add beef stew meat and cook until browned on all sides.
  • Add chopped onion and minced garlic, cook until softened.
  • Add carrots and potatoes, stir to combine.
  • Pour in beef broth, add paprika, salt, and pepper.
  • Bring to a boil, then reduce heat and simmer for 45 minutes to 1 hour, until vegetables are tender.

Notes:

This stew is perfect for a cozy dinner. Serve with crusty bread.
