Ingredients:  

Main Ingredients

  • 1 kg Chicken thighs boneless, skinless
  • 2 Onions chopped
  • 3 cloves Garlic minced
  • 400 g Tomatoes canned, diced
  • 2 tbsp Olive oil
  • 1 tsp Oregano dried
  • 1 tsp Thyme dried
  • 1 cup Chicken broth
  • to taste Salt
  • to taste Black pepper

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chopped onions and minced garlic, sauté until softened.
  • 3. Add chicken thighs and cook until browned on all sides.
  • 4. Stir in canned tomatoes, chicken broth, oregano, and thyme.
  • 5. Bring to a boil, then reduce heat and simmer for 30-35 minutes.
  • 6. Season with salt and black pepper to taste.
  • 7. Serve hot with crusty bread or over rice.

This stew tastes even better the next day!
