Ingredients:  

Main Ingredients

  • 2 lbs pork shoulder, cubed
  • 1 tbsp vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 lb roasted Hatch green chiles, peeled and chopped
  • 4 cups chicken broth
  • 2 large potatoes, peeled and diced
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions: 

  • Heat oil in a large pot over medium heat. Add pork and brown on all sides.
  • Add onion and garlic, cook until softened.
  • Stir in Hatch green chiles, chicken broth, potatoes, and cumin.
  • Bring to a boil, then reduce heat and simmer for 1 hour.
  • Season with salt and pepper to taste.

Notes:

For a spicier stew, add more Hatch green chiles or a pinch of cayenne pepper.
