roasted Hatch green chiles, peeled and chopped

Salt and pepper to taste
Instructions:
Heat oil in a large pot over medium heat. Add pork and brown on all sides.
Add onion and garlic, cook until softened.
Stir in Hatch green chiles, chicken broth, potatoes, and cumin.
Bring to a boil, then reduce heat and simmer for 1 hour.
Season with salt and pepper to taste.
Notes:
For a spicier stew, add more Hatch green chiles or a pinch of cayenne pepper.
