Ingredients:  

Main Ingredients

  • 1 lb Chicken thighs, boneless and skinless cut into chunks
  • 2 cans White beans drained and rinsed
  • 1 large Onion diced
  • 3 cloves Garlic minced
  • 4 cups Chicken broth
  • 1 tsp Dried thyme
  • 1 tsp Dried rosemary
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the diced onion and cook until translucent, about 5 minutes.
  • 3. Add the minced garlic and cook for another minute.
  • 4. Add the chicken chunks and cook until browned on all sides.
  • 5. Pour in the chicken broth, white beans, dried thyme, dried rosemary, salt, and black pepper.
  • 6. Bring to a boil, then reduce heat and let it simmer for 30 minutes.
  • 7. Serve hot and enjoy!

This stew is even better the next day!
