Ingredients:  

Main Ingredients

  • 2 tbsp Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 Red Bell Pepper, chopped
  • 1 can Diced Tomatoes
  • 1 can Black Beans, drained and rinsed
  • 1 can Kidney Beans, drained and rinsed
  • 2 cups Vegetable Broth
  • 1 tsp Ground Cumin
  • 1 tsp Chili Powder
  • to taste Salt and Pepper

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chopped onion and cook until translucent, about 5 minutes.
  • 3. Stir in minced garlic and chopped red bell pepper, cook for another 3 minutes.
  • 4. Add diced tomatoes, black beans, kidney beans, and vegetable broth.
  • 5. Season with ground cumin, chili powder, salt, and pepper.
  • 6. Bring to a boil, then reduce heat and simmer for 20 minutes.
  • 7. Serve hot and enjoy!

Notes:

Feel free to add more spices or vegetables to suit your taste.
