Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add beef cubes and brown on all sides.
3. Add onions and garlic, cook until softened.
4. Pour in beef broth, add carrots, salt, and pepper. Bring to a boil.
5. Reduce heat, cover, and simmer for 1 hour.
6. Add zucchini and cook for another 15 minutes, until tender.
7. Serve hot and enjoy!
