farro

Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and minced garlic, cook until softened.
3. Stir in sliced carrots and celery, cook for another 5 minutes.
4. Add rinsed farro, diced tomatoes, vegetable broth, thyme, oregano, salt, and pepper.
5. Bring to a boil, then reduce heat and simmer for 30-35 minutes, until farro is tender.
6. Stir in chopped kale and cook for another 5 minutes.
7. Serve hot and enjoy!
Notes:
Feel free to add other vegetables like zucchini or bell peppers.
