Ingredients:  

Main Ingredients

  • 1 cup farro rinsed
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 cloves garlic minced
  • 2 stalks celery sliced
  • 1 can diced tomatoes 14.5 oz
  • 4 cups vegetable broth
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste
  • 2 cups kale chopped

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chopped onion and minced garlic, cook until softened.
  • 3. Stir in sliced carrots and celery, cook for another 5 minutes.
  • 4. Add rinsed farro, diced tomatoes, vegetable broth, thyme, oregano, salt, and pepper.
  • 5. Bring to a boil, then reduce heat and simmer for 30-35 minutes, until farro is tender.
  • 6. Stir in chopped kale and cook for another 5 minutes.
  • 7. Serve hot and enjoy!

Notes:

Feel free to add other vegetables like zucchini or bell peppers.
