Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 3 cups vegetable broth
  • 2 cups diced tomatoes
  • 2 cups cubed butternut squash
  • 2 cups cubed potatoes
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp salt to taste
  • 0.5 tsp black pepper to taste

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and cook until translucent, about 5 minutes.
  • Add the minced garlic and cook for another minute.
  • Pour in the vegetable broth and diced tomatoes, then bring to a simmer.
  • Add the butternut squash and potatoes. Simmer until the vegetables are tender, about 30-40 minutes.
  • Stir in the dried thyme, rosemary, salt, and black pepper. Adjust seasoning to taste.
  • Serve hot and enjoy your autumn stew!
