Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another minute.
Pour in the vegetable broth and diced tomatoes, then bring to a simmer.
Add the butternut squash and potatoes. Simmer until the vegetables are tender, about 30-40 minutes.
Stir in the dried thyme, rosemary, salt, and black pepper. Adjust seasoning to taste.
