Ingredients:  

Main Ingredients

  • 2 tbsp vegetable oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 tbsp ginger, minced
  • 2 tbsp curry powder
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1 can diced tomatoes (14 oz)
  • 1 can coconut milk (14 oz)
  • 2 cups vegetable broth
  • 2 cups mixed vegetables (carrots, potatoes, peas) chopped
  • to taste salt and pepper

Instructions: 

  • Heat the oil in a large pot over medium heat. Add the chopped onion and cook until translucent.
  • Add the garlic and ginger, and cook for another minute.
  • Stir in the curry powder, cumin, and coriander, and cook for another minute until fragrant.
  • Add the diced tomatoes, coconut milk, and vegetable broth. Bring to a simmer.
  • Add the mixed vegetables and simmer for about 30 minutes, or until the vegetables are tender.
  • Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to add your favorite vegetables or protein to this stew.
