Instructions:
1. In a large pot, brown the beef stew meat over medium heat.
2. Add the chopped onion and minced garlic, cook until softened.
3. Stir in the tomato paste, thyme, salt, and black pepper.
4. Pour in the beef broth and bring to a boil.
5. Reduce heat, cover, and simmer for 1 hour.
6. Add the carrots and potatoes, simmer for another hour or until vegetables are tender.
7. Adjust seasoning if needed and serve hot.

Feel free to add other vegetables like peas or green beans.
