Ingredients:  

Main Ingredients

  • 2 tbsp olive oil
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 1 cup orzo
  • 4 cups vegetable broth
  • 2 cups cooked chickpeas
  • 4 cups mustard greens, chopped
  • 1 tsp salt to taste
  • 1/2 tsp black pepper to taste

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chopped onion and cook until translucent, about 5 minutes.
  • 3. Stir in minced garlic and cook for another minute.
  • 4. Add orzo and cook, stirring frequently, for 2-3 minutes.
  • 5. Pour in vegetable broth and bring to a boil.
  • 6. Reduce heat to a simmer and cook for 10 minutes, or until orzo is tender.
  • 7. Add cooked chickpeas and chopped mustard greens. Cook for another 5 minutes, until greens are wilted.
  • 8. Season with salt and black pepper to taste. Serve hot.

Notes:

This stew is perfect for a cozy dinner. Feel free to substitute spinach or kale for mustard greens if preferred.
