orzo

mustard greens, chopped

Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and cook until translucent, about 5 minutes.
3. Stir in minced garlic and cook for another minute.
4. Add orzo and cook, stirring frequently, for 2-3 minutes.
5. Pour in vegetable broth and bring to a boil.
6. Reduce heat to a simmer and cook for 10 minutes, or until orzo is tender.
7. Add cooked chickpeas and chopped mustard greens. Cook for another 5 minutes, until greens are wilted.
8. Season with salt and black pepper to taste. Serve hot.
Notes:
This stew is perfect for a cozy dinner. Feel free to substitute spinach or kale for mustard greens if preferred.
