chicken thighs, boneless and skinless

lemons, juiced

lemon, sliced

carrots, chopped

celery stalks, chopped

onion, diced

garlic, minced

Salt and pepper to taste
Instructions:
Heat olive oil in a large pot over medium heat.
Add chicken thighs and cook until browned on all sides. Remove and set aside.
In the same pot, add onion, garlic, carrots, and celery. Cook until vegetables are softened.
Return chicken to the pot. Add chicken broth, lemon juice, lemon slices, and thyme.
Bring to a boil, then reduce heat and simmer for 30 minutes.
Season with salt and pepper to taste. Serve hot.
Notes:
For a thicker stew, you can add a slurry of cornstarch and water during the last 10 minutes of cooking.
