Ingredients:  

Main Ingredients

  • 1 lb chicken thighs, boneless and skinless
  • 2 lemons, juiced
  • 1 lemon, sliced
  • 4 cups chicken broth
  • 2 carrots, chopped
  • 2 celery stalks, chopped
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • Salt and pepper to taste

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chicken thighs and cook until browned on all sides. Remove and set aside.
  • In the same pot, add onion, garlic, carrots, and celery. Cook until vegetables are softened.
  • Return chicken to the pot. Add chicken broth, lemon juice, lemon slices, and thyme.
  • Bring to a boil, then reduce heat and simmer for 30 minutes.
  • Season with salt and pepper to taste. Serve hot.

Notes:

For a thicker stew, you can add a slurry of cornstarch and water during the last 10 minutes of cooking.
