Instructions:
Heat the oil in a large skillet over medium heat.
Add the onion and garlic, and sauté until fragrant.
Stir in the brown sugar and soy sauce, cooking until the sugar is dissolved.
Add the shrimp and cook until they turn pink.
Pour in the chicken broth, thyme, paprika, black pepper, and salt. Stir well.
Add the bell peppers and tomatoes. Simmer for 10-15 minutes until the sauce thickens.
Serve hot with rice or your favorite side.
Notes:
For a spicier version, add some chopped scotch bonnet pepper.
