Instructions:
Preheat your oven to 325°F (165°C).
In a Dutch oven, heat a bit of oil over medium-high heat. Brown the stew meat on all sides.
Add the chopped onion and garlic, cooking until softened.
Pour in the beef broth and diced tomatoes. Stir in the carrots, potatoes, salt, pepper, thyme, and rosemary.
Cover the Dutch oven and place it in the preheated oven. Cook for about 2 hours, or until the meat is tender.
Remove from the oven and let it rest for a few minutes before serving.
Notes:
Feel free to add other vegetables like peas or green beans.
