Ingredients:  

Main Ingredients

  • 500 g Beef chuck, cut into cubes
  • 2 medium Onions, sliced
  • 3 medium Carrots, cut into chunks
  • 2 medium Potatoes, cut into chunks
  • 4 cups Water
  • 1 package Japanese curry roux
  • 2 tbsp Vegetable oil

Instructions: 

  • Heat the oil in a large pot over medium heat. Add the beef and cook until browned on all sides.
  • Add the onions and cook until they are soft and translucent.
  • Add the carrots and potatoes to the pot. Stir to combine.
  • Pour in the water and bring to a boil. Reduce the heat to low and simmer for about 1 hour, or until the beef is tender.
  • Add the curry roux to the pot and stir until it is completely dissolved. Simmer for an additional 10-15 minutes, or until the stew has thickened.
  • Serve hot with steamed rice.

Notes:

This Japanese beef curry stew is even better the next day, so consider making it ahead of time.
