Japanese curry roux

Vegetable oil
Instructions:
Heat the oil in a large pot over medium heat. Add the beef and cook until browned on all sides.
Add the onions and cook until they are soft and translucent.
Add the carrots and potatoes to the pot. Stir to combine.
Pour in the water and bring to a boil. Reduce the heat to low and simmer for about 1 hour, or until the beef is tender.
Add the curry roux to the pot and stir until it is completely dissolved. Simmer for an additional 10-15 minutes, or until the stew has thickened.
Serve hot with steamed rice.
Notes:
This Japanese beef curry stew is even better the next day, so consider making it ahead of time.
