Ingredients:  

Main Ingredients

  • 200 g Chorizo sausage, sliced
  • 1 medium Onion, chopped
  • 2 cloves Garlic, minced
  • 1 can Diced tomatoes (400g)
  • 1 can Cannellini beans, drained and rinsed (400g)
  • 1 can Kidney beans, drained and rinsed (400g)
  • 2 cups Chicken broth
  • 1 tsp Smoked paprika
  • 1 tsp Ground cumin
  • to taste Salt and pepper
  • 2 tbsp Olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the chorizo and cook until browned, about 5 minutes.
  • 3. Add the onion and garlic, and cook until softened, about 3 minutes.
  • 4. Stir in the diced tomatoes, cannellini beans, kidney beans, chicken broth, smoked paprika, and ground cumin.
  • 5. Bring to a boil, then reduce the heat and simmer for 30 minutes.
  • 6. Season with salt and pepper to taste.
  • 7. Serve hot and enjoy!

Notes:

This stew is perfect for a cozy dinner. Serve with crusty bread.
