Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Brown the meat on all sides.
3. Add the onions and cook until softened.
4. Add the carrots and potatoes.
5. Pour in the beef stock and bring to a boil.
6. Reduce the heat and let it simmer for about 2 hours, or until the meat is tender.
7. Season with salt and pepper to taste.

Serve with crusty bread.
