Ingredients:  

Main Ingredients

  • 1 tbsp Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 can Diced Tomatoes 14 oz
  • 1 can Chickpeas, drained and rinsed 14 oz
  • 4 cups Vegetable Broth
  • 4 cups Kale, chopped
  • to taste Salt and Pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add chopped onion and cook until translucent, about 5 minutes.
  • Add minced garlic, ground cumin, and ground coriander. Cook for another minute.
  • Add diced tomatoes, chickpeas, and vegetable broth. Bring to a boil.
  • Reduce heat and let simmer for 15 minutes.
  • Add chopped kale and cook until wilted, about 5 minutes.
  • Season with salt and pepper to taste. Serve hot.

Notes:

This stew is perfect for a cozy night in. Serve with crusty bread for a complete meal.
