Ingredients:  

Main Ingredients

  • 500 g Okra trimmed
  • 300 g Beef or lamb cut into cubes
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 tbsp Tomato paste
  • 400 g Tomatoes chopped
  • 2 cups Water or broth
  • 1 tsp Turmeric
  • 1 tsp Salt to taste
  • 0.5 tsp Black pepper to taste

Instructions: 

  • 1. Heat some oil in a large pot over medium heat. Add the chopped onions and sauté until golden.
  • 2. Add the minced garlic and turmeric, and sauté for another minute.
  • 3. Add the meat cubes and brown on all sides.
  • 4. Stir in the tomato paste and chopped tomatoes. Cook for a few minutes until the tomatoes soften.
  • 5. Pour in the water or broth, bring to a boil, then reduce the heat and let it simmer for about 45 minutes, or until the meat is tender.
  • 6. Add the okra, salt, and pepper. Cook for another 15 minutes until the okra is tender.
  • 7. Adjust seasoning if needed. Serve hot with rice.

Notes:

For a vegetarian version, you can skip the meat and add more vegetables like eggplant or zucchini.
