Instructions:
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and garlic, and sauté until softened.
Add the chopped tomatoes and cook for another 5 minutes.
Pour in the fish stock and bring to a simmer.
Season with salt and black pepper.
Add the mackerel fillets and cook for 20-25 minutes, until the fish is cooked through.
Garnish with chopped parsley before serving.
Notes:
Serve with crusty bread or steamed rice.
