Ingredients:  

Main Ingredients

  • 4 fillets Mackerel fresh
  • 2 tbsp Olive oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 2 cups Tomatoes chopped
  • 1 cup Fish stock
  • 1 tsp Salt or to taste
  • 0.5 tsp Black pepper freshly ground
  • 2 tbsp Parsley chopped

Instructions: 

  • Heat the olive oil in a large pot over medium heat.
  • Add the chopped onion and garlic, and sauté until softened.
  • Add the chopped tomatoes and cook for another 5 minutes.
  • Pour in the fish stock and bring to a simmer.
  • Season with salt and black pepper.
  • Add the mackerel fillets and cook for 20-25 minutes, until the fish is cooked through.
  • Garnish with chopped parsley before serving.

Notes:

Serve with crusty bread or steamed rice.
