Instructions:
Heat olive oil in a large pot over medium heat.
Add diced chicken and cook until browned.
Add chopped onion, carrots, and minced garlic. Cook until vegetables are tender.
Stir in lentils, chicken broth, cumin, and paprika. Bring to a boil.
Reduce heat, cover, and simmer for 30 minutes or until lentils are tender.
Season with salt and pepper to taste. Stir in spinach if using, and cook until wilted.
Serve hot.
Notes:
This stew is great for meal prep and can be stored in the fridge for up to 4 days.
