Ingredients:  

Main Ingredients

  • 2 tbsp Olive Oil
  • 1 lb Chicken Breast, diced
  • 1 cup Lentils, rinsed
  • 1 Onion, chopped
  • 2 Carrots, chopped
  • 2 cloves Garlic, minced
  • 4 cups Chicken Broth
  • 1 tsp Cumin
  • 1 tsp Paprika
  • to taste Salt and Pepper
  • 2 cups Spinach optional

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add diced chicken and cook until browned.
  • Add chopped onion, carrots, and minced garlic. Cook until vegetables are tender.
  • Stir in lentils, chicken broth, cumin, and paprika. Bring to a boil.
  • Reduce heat, cover, and simmer for 30 minutes or until lentils are tender.
  • Season with salt and pepper to taste. Stir in spinach if using, and cook until wilted.
  • Serve hot.

Notes:

This stew is great for meal prep and can be stored in the fridge for up to 4 days.
