Instructions:
Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
Add garlic and leeks, cook until softened.
Add carrots, potatoes, beef broth, bay leaf, and thyme. Bring to a boil.
Reduce heat, cover, and simmer for 1 hour or until beef is tender.
Season with salt and pepper to taste. Remove bay leaf before serving.
