Ingredients:  

Main Ingredients

  • 1 lb beef stew meat cut into chunks
  • 2 large leeks cleaned and sliced
  • 3 medium carrots peeled and chopped
  • 2 medium potatoes peeled and cubed
  • 4 cups beef broth
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • to taste salt and pepper
  • 1 bay leaf
  • 1 tsp dried thyme

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
  • Add garlic and leeks, cook until softened.
  • Add carrots, potatoes, beef broth, bay leaf, and thyme. Bring to a boil.
  • Reduce heat, cover, and simmer for 1 hour or until beef is tender.
  • Season with salt and pepper to taste. Remove bay leaf before serving.
