Ingredients:  

Main Ingredients

  • 1 lb Chicken Thighs boneless, skinless
  • 8 oz Mushrooms sliced
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Chicken Broth
  • 2 tbsp Olive Oil
  • 1 tsp Thyme dried
  • 1 tsp Salt or to taste
  • 1/2 tsp Black Pepper or to taste

Instructions: 

  • 1. Heat olive oil in a large pot over medium heat.
  • 2. Add chopped onion and minced garlic, sauté until fragrant.
  • 3. Add chicken thighs and cook until browned on all sides.
  • 4. Add sliced mushrooms and cook for another 5 minutes.
  • 5. Pour in chicken broth, add thyme, salt, and pepper. Bring to a boil.
  • 6. Reduce heat and let it simmer for 30 minutes, or until chicken is cooked through and tender.
  • 7. Serve hot and enjoy!

Notes:

You can add some potatoes or carrots for extra heartiness.
