Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and minced garlic, sauté until fragrant.
3. Add chicken thighs and cook until browned on all sides.
4. Add sliced mushrooms and cook for another 5 minutes.
5. Pour in chicken broth, add thyme, salt, and pepper. Bring to a boil.
6. Reduce heat and let it simmer for 30 minutes, or until chicken is cooked through and tender.
7. Serve hot and enjoy!
Notes:
You can add some potatoes or carrots for extra heartiness.
