Ingredients:  

Main Ingredients

  • 2 lbs beef stew meat cut into chunks
  • 2 tbsp olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 tbsp Dijon mustard
  • 1/2 cup Cognac
  • 4 cups beef broth
  • 2 large carrots sliced
  • 2 large potatoes diced
  • 1 tsp dried thyme
  • 1 tsp salt
  • 1/2 tsp black pepper

Instructions: 

  • Heat olive oil in a large pot over medium heat. Add beef and brown on all sides.
  • Add chopped onion and minced garlic to the pot. Cook until onion is translucent.
  • Stir in Dijon mustard and Cognac. Cook for 2 minutes.
  • Add beef broth, carrots, potatoes, thyme, salt, and pepper. Bring to a boil.
  • Reduce heat to low, cover, and simmer for 2 hours, stirring occasionally.
  • Serve hot and enjoy!

Notes:

This stew is perfect for a cozy dinner. Serve with crusty bread.
