Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add beef stew meat and brown on all sides.
3. Add chopped onion and minced garlic, cook until softened.
4. Stir in tomato paste, beef broth, salt, and black pepper.
5. Bring to a boil, then reduce heat and simmer for 1.5 hours.
6. Add sliced bell peppers and cook for another 30 minutes.
7. Serve hot and enjoy!
