Instructions:
1. In a large pot, brown the beef chuck over medium heat.
2. Add the diced onion and minced garlic, cook until softened.
3. Pour in the coconut milk and beef broth, bring to a boil.
4. Reduce heat, cover, and simmer for 1.5 hours.
5. Add the chopped spinach, soy sauce, brown sugar, salt, and black pepper. Simmer for another 30 minutes.
Notes:
Serve hot with rice or taro.
