Ingredients:  

Main Ingredients

  • 2 lbs beef chuck cut into cubes
  • 1 large onion diced
  • 3 cloves garlic minced
  • 1 can coconut milk 13.5 oz
  • 2 cups beef broth
  • 1 bunch spinach chopped
  • 2 tbsp soy sauce
  • 1 tbsp brown sugar
  • 1 tsp salt
  • 1 tsp black pepper

Instructions: 

  • 1. In a large pot, brown the beef chuck over medium heat.
  • 2. Add the diced onion and minced garlic, cook until softened.
  • 3. Pour in the coconut milk and beef broth, bring to a boil.
  • 4. Reduce heat, cover, and simmer for 1.5 hours.
  • 5. Add the chopped spinach, soy sauce, brown sugar, salt, and black pepper. Simmer for another 30 minutes.

Notes:

Serve hot with rice or taro.
