Ingredients:  

Main Ingredients

  • 2 lbs Beef chuck, cut into cubes
  • 1 cup Carrots, chopped
  • 1 cup Celery, chopped
  • 1 cup Onion, chopped
  • 3 cloves Garlic, minced
  • 1 cup Balsamic vinegar
  • 4 cups Beef broth
  • 2 tbsp Tomato paste
  • 2 tsp Dried thyme
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil

Instructions: 

  • 1. Heat olive oil in a Dutch oven over medium heat.
  • 2. Add beef and brown on all sides. Remove and set aside.
  • 3. In the same pot, add onions, carrots, and celery. Cook until softened.
  • 4. Add garlic and cook for another minute.
  • 5. Stir in tomato paste, balsamic vinegar, and beef broth.
  • 6. Return beef to the pot. Add thyme, salt, and pepper.
  • 7. Bring to a boil, then reduce heat and simmer for 2 hours.
  • 8. Serve hot and enjoy!
