Instructions:
Heat olive oil in a large pot over medium heat.
Add onion, garlic, and bell pepper. Sauté until softened.
Add tomatoes, thyme, paprika, salt, and black pepper. Cook for another 5 minutes.
Add yellow yam and vegetable broth. Bring to a boil.
Reduce heat and simmer for 30-35 minutes, until yam is tender.
Adjust seasoning if needed. Serve hot.
Notes:
This stew is perfect for a cozy dinner. Feel free to add more vegetables if you like.
