Ingredients:  

Main Ingredients

  • 2 lbs yellow yam, peeled and cubed
  • 1 large onion, chopped
  • 2 cloves garlic, minced
  • 1 bell pepper, chopped
  • 2 tomatoes, chopped
  • 1 tsp thyme
  • 1 tsp paprika
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 4 cups vegetable broth
  • 2 tbsp olive oil

Instructions: 

  • Heat olive oil in a large pot over medium heat.
  • Add onion, garlic, and bell pepper. Sauté until softened.
  • Add tomatoes, thyme, paprika, salt, and black pepper. Cook for another 5 minutes.
  • Add yellow yam and vegetable broth. Bring to a boil.
  • Reduce heat and simmer for 30-35 minutes, until yam is tender.
  • Adjust seasoning if needed. Serve hot.

Notes:

This stew is perfect for a cozy dinner. Feel free to add more vegetables if you like.
