Ingredients:  

Main Ingredients

  • 1 whole possum cleaned and cut into pieces
  • 2 cups potatoes diced
  • 1 cup carrots sliced
  • 1 cup celery chopped
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 4 cups chicken broth
  • 1 tsp salt
  • 1 tsp black pepper
  • 2 tbsp olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the possum pieces and brown on all sides.
  • 3. Add the onion and garlic, cook until softened.
  • 4. Pour in the chicken broth and bring to a boil.
  • 5. Add the potatoes, carrots, celery, salt, and pepper.
  • 6. Reduce heat and simmer for 2 hours, or until the meat is tender.
  • 7. Serve hot and enjoy!

Make sure to clean the possum thoroughly before cooking.
