Salt and Pepper
Instructions:
Heat olive oil in a large pot over medium heat.
Add beef cubes and brown on all sides. Remove and set aside.
In the same pot, add onions, carrots, and garlic. Cook until softened.
Return beef to the pot. Add red wine, beef broth, tomato paste, thyme, rosemary, and bay leaves.
Bring to a boil, then reduce heat and simmer for 2 hours, or until beef is tender.
Season with salt and pepper to taste. Serve hot.
Notes:
For a richer flavor, let the stew sit overnight and reheat before serving.
