Ingredients:  

Main Ingredients

  • 1 lb lean beef, cubed
  • 2 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups low-sodium beef broth
  • 1 cup peas
  • 1 tsp thyme
  • Salt and pepper to taste

Instructions: 

  • Brown the beef in a large pot over medium heat.
  • Add the onion and garlic, cook until softened.
  • Add carrots and potatoes, cook for a few minutes.
  • Pour in the beef broth, bring to a boil.
  • Reduce heat, cover, and simmer for 30 minutes.
  • Add peas and thyme, cook for another 10 minutes.
  • Season with salt and pepper to taste.

Notes:

Feel free to add more vegetables if you like.
