Instructions:
In a large pot, brown the beef stew meat over medium heat.
Add the chopped onion and minced garlic, cook until softened.
Pour in the beef broth and bring to a boil.
Add the carrots, potatoes, salt, pepper, thyme, and bay leaf.
Reduce heat and simmer for 1 hour, or until the meat is tender.
Remove the bay leaf before serving.
Notes:
Feel free to add other vegetables like peas or green beans.
