Ingredients:  

Main Ingredients

  • 2 lbs pork shoulder, cubed
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 4 cups chicken broth
  • 3 large carrots, sliced
  • 4 large potatoes, cubed
  • 1 tsp dried thyme
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 tbsp olive oil

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat. Add the pork and brown on all sides.
  • 2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
  • 3. Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 1 hour.
  • 4. Add the sliced carrots, cubed potatoes, dried thyme, salt, and black pepper. Simmer for another hour until vegetables are tender.
  • 5. Adjust seasoning if needed. Serve hot.

Notes:

This stew is even better the next day. Store in the fridge and reheat gently.
