Instructions:
1. Heat the olive oil in a large pot over medium heat. Add the pork and brown on all sides.
2. Add the chopped onion and minced garlic to the pot. Cook until the onion is translucent.
3. Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for 1 hour.
4. Add the sliced carrots, cubed potatoes, dried thyme, salt, and black pepper. Simmer for another hour until vegetables are tender.
5. Adjust seasoning if needed. Serve hot.
Notes:
This stew is even better the next day. Store in the fridge and reheat gently.
