vegetable broth

dried thyme

Instructions:
1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and cook until translucent, about 5 minutes.
3. Stir in minced garlic and cook for another minute.
4. Add sliced mushrooms and cook until they release their moisture and start to brown, about 10 minutes.
5. Pour in vegetable broth and diced tomatoes. Stir in thyme and oregano.
6. Bring to a simmer, reduce heat, and cook for 20-25 minutes until the stew thickens.
7. Season with salt and pepper to taste. Serve hot.
Notes:
Feel free to add other vegetables like carrots or potatoes for extra heartiness.
