Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the alligator meat and cook until browned on all sides.
3. Add the onion, celery, bell pepper, and garlic. Cook until the vegetables are tender.
4. Pour in the chicken broth and add the thyme, paprika, salt, and black pepper. Bring to a boil.
5. Reduce heat and simmer for 30 minutes.
6. Add the diced tomatoes and okra. Simmer for another 15 minutes.
7. Adjust seasoning if necessary and serve hot.
Notes:
This stew is best served with rice or crusty bread.
