Ingredients:  

Main Ingredients

  • 1 lb Alligator meat cut into bite-sized pieces
  • 1 cup Onion chopped
  • 1 cup Celery chopped
  • 1 cup Bell pepper chopped
  • 3 cloves Garlic minced
  • 2 tbsp Olive oil
  • 4 cups Chicken broth
  • 1 tsp Thyme dried
  • 1 tsp Paprika
  • 1 tsp Salt or to taste
  • 1 tsp Black pepper or to taste
  • 2 cups Tomatoes diced
  • 2 cups Okra sliced

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the alligator meat and cook until browned on all sides.
  • 3. Add the onion, celery, bell pepper, and garlic. Cook until the vegetables are tender.
  • 4. Pour in the chicken broth and add the thyme, paprika, salt, and black pepper. Bring to a boil.
  • 5. Reduce heat and simmer for 30 minutes.
  • 6. Add the diced tomatoes and okra. Simmer for another 15 minutes.
  • 7. Adjust seasoning if necessary and serve hot.

Notes:

This stew is best served with rice or crusty bread.
