Instructions:
1. Heat a large pot over medium heat and add a bit of oil.
2. Add the beef and cook until browned on all sides.
3. Add the onion and cook until softened.
4. Add the potatoes, dashi stock, soy sauce, mirin, and sugar. Bring to a boil.
5. Reduce heat to low and simmer for about 30-40 minutes, or until the potatoes and beef are tender.
6. Serve hot and enjoy!

This stew is perfect for a cozy night in. Feel free to add other vegetables like carrots or mushrooms.
