white fish fillets
cut into chunks

diced tomatoes
canned

fish stock

chopped bell peppers
mixed colors

chopped onions

Cajun seasoning

olive oil
to taste
salt and pepper
Instructions:
1. Heat the olive oil in a large pot over medium heat.
2. Add the onions, bell peppers, and garlic. Cook until softened.
3. Stir in the Cajun seasoning and cook for another minute.
4. Add the diced tomatoes and fish stock. Bring to a simmer.
5. Add the fish chunks and cook until the fish is cooked through, about 10 minutes.
6. Season with salt and pepper to taste. Serve hot.
Notes:
Feel free to add some shrimp or other seafood for variety.
