Ingredients:  

Main Ingredients

  • 1 lb white fish fillets cut into chunks
  • 1 cup diced tomatoes canned
  • 1 cup fish stock
  • 1 cup chopped bell peppers mixed colors
  • 1 cup chopped onions
  • 2 cloves garlic minced
  • 1 tbsp Cajun seasoning
  • 2 tbsp olive oil
  • to taste salt and pepper

Instructions: 

  • 1. Heat the olive oil in a large pot over medium heat.
  • 2. Add the onions, bell peppers, and garlic. Cook until softened.
  • 3. Stir in the Cajun seasoning and cook for another minute.
  • 4. Add the diced tomatoes and fish stock. Bring to a simmer.
  • 5. Add the fish chunks and cook until the fish is cooked through, about 10 minutes.
  • 6. Season with salt and pepper to taste. Serve hot.

Notes:

Feel free to add some shrimp or other seafood for variety.
